Artichoke is a perennial plant, and often cultivated for food. This plant, due to its properties, has been transformed from a wild plant to a cultivated plant. Artichoke leaves have a complex composition of active principles, highlighting its richness in caffeilquinic acids and their derivatives, mainly cynarin and chlorogenic acid . These active principles are found in the leaves, but mainly in the leaves corresponding to the first year.
